A tree would end up having leaves covering other leaves from wind and light. And honestly I don't think we need to try too hard trying to make these things look like the "real deal", it would look even more hokey. I like the ivy look.

Sure but the vine configuration shows just one side of a house to light and wind and there is overlap too. Wind may pass through a tree configuration better too and there would always be a side facing the sun.
As for the hokey aspect, I agree but the vine config looks pretty hokey too :)
